Thai Chicken Soup

“I made it up, but here goes…” 😊

Fry 1 or 2 onions

Add ginger and chilli (and garlic if you want)

Add a mixture of chopped vegetables (I bought the fresh potjie mix from Foodlovers and chopped it up. It was cauliflower, broccoli, carrot, zucchini etc.)

Add a Kallo chicken stock cube dissolved in water.  (Add 2 if you are making a big batch)

Add a couple of tablespoons bone broth.

Allow to sweat and reduce a bit to intensify flavour.

Add enough water for it to be soup.

Add chopped chicken fillet or breast. Simmer until chicken cooked through (10 min or so)

Add a pack of Woolies Tom Kah Gai ready-made soup.

Remove from stove and either mash or food process about a quarter to a third of the soup and return it to the pot.

Simmer until consistency looks right! (Maybe 10 min)
